Rooster capes (scalps) are irreplaceable tying material for most dry fly tiers. Not even popular CDC duck feather can`t come close to rooster feather. And no synthetic yet is able to replace natural ultra fine feather fibers. Of course if we are talking about normal "back yard" rooster cape or genetic derivate of Whiting or Metz farms, there is huge different amongst them; genetic feathers are much longer and narrower with harder fibers which are holding dry fly much better on the surface than a "home grown" hackles which are usually softer and more suitable for wet flies. Fly tying saddles are similar to capes but have longer feathers but less of different sizes. That`s why they are better for professional tiers who tie lots of dry flies in similar sizes.
